*What is the difference between Pasteurized and Raw?
Pasteurization is for food safety and it goes through flash heat to remove any thermo-sensitive bacteria so we recommend it for young children above the age of 2, expectant mothers and seniors.
The argument against pasteurization is that the process removes a bit of the micro-nutrients (only standard macro-nutrients are required by regulations to be tested) along the process.
Whereas Raw is how the Brazilians have been consuming their Açaí for decades. Recommended for raw vegans, health and fitness-conscious adults who wish to reap the raw power of the Açaí, and anyone who prefers to use raw ingredients.
We ourselves eat between both =)
*How do I achieve the kind of Acai texture in the retail shops?
Majority of the retail shops do not do fresh blends using pure Acai pulp but use pre-made Ready To Serve Acai (read here to learn more and how to tell if you are getting fresh blends or pre-made Acai) which is like a ready made ice cream, it provides a nice consistent texture but it comes with sweetener, sugar and stabilisers at the least.
For fresh blends, the best texture for Acai bowl can be achieved by using frozen banana and Pure Organic Unsweetened Acai pulp without any liquid but you would require a heavy duty commercial blender to do it. For most consumer blenders you would need to add some liquid like 1-2 tbsp (depending on your blender power/performance, too much liquid and your Acai will become watery) and see if it blends. So basically no or the lesser the liquid, the better the texture but it’s dependant on your blender’s powder and performance.

How long can the acai pulp be kept for?
It should be kept frozen until its date of expiry on the packaging. Should you thaw it, please consume within 24 hours.
